I mentioned in an earlier post that the cafeteria’s in Chinese universities are not only delicious but cheap. I took a leap of faith and ordered the custom made soup. I’m sooooo glad I did!
They cooked the vegetables and made it a little spicy for me. It was so scrumptious and cost my $0.73!
But that’s not all!
They also have this amazing eggplant (I didn’t know how much I loved eggplant before I came to China) which you can pair with breaded chicken strips on rice.
$1.30!
One of the best things about China is exploring the dishes and snack food. I just hope I don’t get too fat!

Eva: Your Aunt Toby loves Eggplant that for many years she planted them in her garden.
Nihao Eva – We like your updates very much! Thank you for sharing so many interesting insights. We’re enjoying more snow here – its looking clean and delicately powdery; a great creation on creation.
